I typically don’t go around quoting Bethenny Frankel or any other reality TV star, for that matter, but I have to admit that the girl knows her salads. A well-made salad can be an amazing staple in any healthy diet, so my ears perked up when she recently shared her expert tips for creating the perfect healthy salad. It’s easy to turn a salad into a diet torpedo. It’s just as easy, though, to make one that’s delicious and low cal. Here’s how:
Start with loads of veggies (as many as you want), add in one protein, and top with an indulgence. Drizzle on a light vinaigrette or a creamy dressing diluted with a bit of vinegar. Essentially, base your healthy salad creations on this formula, and you’ll never run out of creative ideas: VEGGIES + PROTEIN + INDULGENCE
Veggies – Mixed greens, spinach, sugar snap peas, broccoli, cucumbers, peppers, cauliflower, onions, zucchini, green beans, and tomatoes
Protein – Three ounces of chicken, turkey, or fish, or 3/4 cup of chickpeas, cannellini beans, lentils, black beans, or white beans
Indulgence – One tablespoon diced avocado or bacon, chopped nuts, or finely shredded or crumbled cheese (no big chunks allowed!)
